Salad Cravings Cured!

All last week I was craving salad.  I usually don’t crave things like salad, but I really wanted a Quesadilla Explosion salad from Chili’s.  Have you had this?  It’s one of my favorite things there!  Sadly if you eat the entire salad, which I normally do, it is 1400 calories.  I wanted to try to make my own version of this salad and see if I could save some calories.

Ingredient List

  • 1 can of black beans – 200 calories
  • 1 can of corn – 171 calories
  • 1 bag of just lettuce – 75 calories
  • 1 medium sized tomato – 38 calories
  • 1 lb of lean and trim chicken – 86 calories
  • 2 tbsp light ranch dressing – 154 calories
  • 2 tbsp western dressing – 100 calories

If you ate the entire version of my salad, which is like 2.5 of the Chili’s verison, it would be about 824 calories.  That is major difference over the Chili’s salad.  I was really happy with the taste of this salad, although it was not exact, it tasted mighty good and cured my salad craving!

I did add crescent rolls to my salad because when you go to Chili’s the salad normally comes with cheese quesadillas.  I had 2 crescent rolls, which are each 110 calories.

All in all a successful meal that filled me up and I enjoyed leftovers for 2 days!  It was super simple and really inexpensive.  I spent around $10 for these ingredients, but I already had the salad dressings and crescent rolls at home.  I would like to experiment with other salad dressings, but I think I did a pretty tasty job with what I had available!  Oh, and by the way, the salad looked and tasted a lot better than what the picture shows!
